Short Order Cookery is a level 4 module allowing learners to understand how a professional kitchen is organized and run. Describing commodities, equipment, preparation techniques, and carrying out basic cookery techniques including grilling, poaching, simmering, boiling, shallow and deep-frying. This module enables learners to use a range of cooking equipment and utensils and to prepare a variety of simple breakfast and lunch items. |
