Meal Service – Level 5
 
Meal Service is a level 5 module that enables learners to gain experience, skills, and knowledge in the Service of Food and Beverages in a controlled environment. To develop the basic technical, interpersonal skills, and customer service skills to work successfully in the foodservice industry.

Short Order Cookery – Level 4
 
Short Order Cookery is a level 4 module allowing learners to understand how a professional kitchen is organized and run.  Describing commodities, equipment, preparation techniques, and carrying out basic cookery techniques including grilling, poaching, simmering, boiling, shallow and deep-frying.  This module enables learners to use a range of cooking equipment and utensils and to prepare a variety of simple breakfast and lunch items.

Handling Food Hygienically – Level 4
 
Handling Food Hygienically is a level 4 module that shows the learner the importance of Safe and Hygienic food practices. To state their role and legal responsibility in food and hygiene safety including personal hygiene. To inform the learner about safe and hygienic food preparation practices including HACCAP, record keeping, and pest control.
